Cheese of your choice (I use pepper jack) cut into small 1/2 inch squares.
Thick cut bacon (watch for carbs! Bacon cured different ways has more carbs!)
Spices of your choice.
Carbs will vary depending on the types of meat and cheese you use.
Finely chopped and seeded jalapeño peppers
Fresh ground Black Pepper
Himalayan Pink Salt
(Eyeball it, add to chicken and mix well) – change up the spices, cheese and even the type of meat each time to change up the flavor. I’ve even taken the skin from a bratwurst and used that. Was delicious!)
Anyway, make small patties from the meat. Place cheese in center of patty. Roll meat into a ball big enough to fully cover a cheese cube. Repeat until meat and cheese is gone.
You can sprinkle a little more spice here if you want.
Wrap one slice of bacon to fully cover meatball. Repeat.
Balls are bigger than gold balls but probably smaller than tennis balls. I just eyeball it all.
Cook on 350 for about an hour, or until cooked through.
You can pull from oven and cut one open to check.
